In contrast to traditional bookmakers, betting exchanges offer the opportunity  not only to bet on a certain outcome, but to bet or "lay" against it.
 
This is achieved by members matching bets against each other, rather than placing a bet directly with a bookmaker. The result of this is that higher odds are generally available on these sites, though obviously the facilitator takes a cut of the action for their trouble - typically this will range from 2 - 5 % of the profit made on any given transaction.
